Grapes Varieties : Cinsault, Pinot Noir. The grapes are de-stemmed, crushed and undergo a gentle maceration of the grapes without remontage, for 3 days only in order to get only a very little extraction. The wine is spontaneously fermented and then aged in tanks, lightly filtered and fined, and bottled the following spring with a little addition of sulfur.
